Out of those plug-ins only Jiffie actually runs IE. For the most, Jiffie seems to have any problems (that I am aware of) with IE 7. However, I haven't installed IE 7 yet and I don't intend to. Therefore, I can't tell you if the acceptance tests pass or not under IE 7.
Selenium also supports IE 7, but it is an experimental plug-in. I am currently finishing up the first release of a Watij plug-in and it seems good under IE 7, except for one noted problem in the user groups (I don't what it is specifically).
