Due to the fact that JavaCard SDK has not been develop for other platforms than Windows, we didn't plan to port IzyNFC on Mac OS nor Linux.
To answer your second question IzyNFC exists as simple plugin but the problem will be the same.

but when it comes to generate the cap file, the converter seems not to be compliant with non windows platforms. Is there a way, to replace the converter only ?

The problem is that IzyNFC depends on the JavaCard SDK of SUN/Oracle. And SUN/Oracle will neither develop nor update converter and other JavaCard tools for other platforms. Even SIM Manufacturers provide tools just for Windows.
