I've got a connex 400 with a wifistix and it worked just fine, save some
WPA issues. You might want to get a tweener and serial cable as well.
You can power it all with a battery as described somewhere on the wiki.
The connex comes with linux pre-installed and even has a web server
running, so you can be serving webpages in about 2 hours after getting
it in the mail.
For GSM, I don't think they make a native board, but the wifistix-cf has
a cf slot that you might be able to put a gsm card into. There seem to
be several makers of those. Here's one:
