Thanks J.L. that was the problem. Common mistake =)
Now I'm running into another problem which is giving me different results than what the Gumstix website is showing me and I want to make sure it is correct.
td@TDlaptop:~$ sudo mkfs.vfat -F 32 /dev/sdb1 -n FAT
mkfs.vfat 3.0.7 (24 Dec 2009)
mkfs.vfat: /dev/sdb1 contains a mounted file system.
td@TDlaptop:~$ sudo mkfs.ext3 /dev/sdb2
mke2fs 1.41.11 (14-Mar-2010)
/dev/sdb2 is mounted; will not make a filesystem here!
