You will have to have custom hardware and interface with the gumstix. I would first find an ADC that met my spec, interface with a CPLD if ADC communication protocol did not match with the gumstix's SPI or I2C, and then interface the CPLD with the gumstix with your data protocol of your choice. Use either the wifi board or a bluetooth module to finish the task. I don't know your budget, but this method ain't cheap with custom PCB and parts.
