On the OMAP3 EVM board I was using tftp to boot the kernel, and then I used NFS for the file system. That way I didn't have toe keep removing/plugging-in the SD card.

I tried that with the Gumstix Tobi board, but the uboot on it doesn't seem to support tftp or any other networking stuff. I assume uboot just needs to be rebuilt to support the SMSC LAN9221?

Yes, but "just" is a bit optimistic about the ease of doing so :-)

I'm working on some patches to support the lan9221 in u-boot, but it isn't yet working.
