Have you ever tried blob detection using a plain GStreamer pipeline…?
I mean using gstreamer plugins such as opencv, filters, etc?
I was wandering how, at least, I could make a background substraction right out of a GSPipe instead of using java classes in Processing but I have no advance GStreamer skills.
I also lack from good openGL driver in order to achieve this using shaders.

I haven't tried, but I was aware of the opencv/glsl plugins for gstreamer you mention.
As long as you can get a pipeline working from the command line, it should be possible in principle to run in processing.
