so lets say i have 6 vertices, two top, two middle and two bottom, all vertices are part of surrounding polygons, i would want to connect the two vertices from the middle with a edge and then make two quad polygons out of this
but if i select the two vertices and select 'connect', no matter what i do with the connect-options, nothing happens.
what am i doing wrong?

In most modellers, the connect tool connects two vertices by creating an edge that splits a face.
It will not create an edge that has no faces, which is what you are trying to do I think.
Here is how you would do it.
Select the edges that make up the boundary of the hole (all of them).
Now use the 'fill' tool (in edges mode) to make a fill polygon.
This polygon will have 6 edges. Since you want two quads, you will need to
split it. To do this, select the middle vertices, and use the connect tool.
