If I have a collection of patterns (broken down by folders) on the Golly installation on the Mac, how do I transfer that collection all-at-once to Golly on the iPad?
The Golly folders in the finder on the Mac show Downloads, Rules, and Saved. But I have not been able to get any of them to reflect the set of patterns in my own pattern folder in the Golly app. Therefore, I can't get my pattern folder to synch.

Drag all your pattern and rule files into Golly's Documents folder.
Golly will automatically move files into the appropriate sub-folders when
you switch to Golly's Open tab or tap the Pattern tab's Rule button.
Any files with extensions of .rule, .tree or .table are moved into Documents/Rules/.
All other files are assumed to be pattern files and are moved into Documents/Saved/.
Note that any existing files with the same names as the files being moved will be replaced.

Observe the first screen shot of Golly on the Mac. There is a folder, 'My Life Patterns' which contains subfolders and patterns. I was able to do this by moving the folder 'My Life Patterns' to the appropriate place in the Golly Program folder.
Now observe the second screen shot. It shows the result of moving 1 pattern file as well as the same folder (My Life Patterns) to the synch area for Golly on the Catalina finder. If I press the synch button, the result is that the pattern file (Organism.life) appears in Saved on the iPad Golly program when I click on the open control on the bottom. However, the folder 'My Life Patterns' is nowhere to be found on the iPad. I have tried various things to make it work, but I think something is wrong with Golly as far as synching with a Mac.
Sorry, but I don't think it's possible to copy folders from your Mac to the iPad Golly. At least, I never found a way to do it. You'll have to copy only your files. That means losing the nice folder structure (just one of the reasons I hate these sort of sandboxed environments).

Perhaps it is possible, but apparently Apple has not given developers such as yourself the information. I say this because, when synching files for the Pages app, one gets the complete folder structure. The same goes for Garage Band. It is why I expected Golly to do the same. Hopefully this can be fixed in a Golly update, but I will not be holding my breath. :)
P.S. When downloading files from the sites, it seemed to me that there was no way to pick a lot of files - just one at a time. I think this was true on the Mac as well as the iPad.
