That's what the 'palette' option in the linestyle section of
the 'splot' command is for, i.e.
plot 'data' u 1:2:3 w lines palette
should do that (may have to be u 1:2:3:3 instead...)

I don't think I quite understand what you're doing there. The above
description would match the 'with filledcurves' plot style, not the 'pm3d'
one. Maybe you should really show more details, including the complete
set of actual plot commands you're using.
