Alex et. al., I might be interested in leading this. I care about encouraging client WFS development and it is probably a good idea for me to see the other side of the fence as well (GML parsing as opposed to be GML generation). Let me take a deeper look at the code this week and see what I think. Off-hand, I think that I might have a fairly simple approach that will work well with your existing code.
