I find your installer very powerful and well thought, with the possibility during the installation to choose which extensions will be added to Gimp.
For the beginners who start with Gimp, like me few months ago, it less frustrating and more efficient to play with the extensions of Gimp, instead wasting time and energy in order to find how install the extensions.
Your installer is stable and very quick but I would like to suggest you some other extensions which seems necessary to complete Gimp.

Some of them will be included in the next release.
Photo Effects are already present in the package (Filters > Artistic > GIMPressionist).
I had already thought of including GAP, but it would greatly increase the size of the installer. Maybe the best would be to make a separate installer for GAP. I'll think about that later.

What about adding some of elsamuko´s plugin? Clone detection https://sites.google.com/site/elsamuko/forensics/clone-detection would be perfect.
I tried several times in the past but it still crashes popping the error:
Plug-in crashed: "elsamuko-copy-move.exe"

The dying plug-in may have messed up GIMP's internal state. You may want to save your images and restart GIMP to be on the safe side.
There is a new version (v.8) from Oct 13, 2012 in .c, but I still don't know how to compile for GIMP.
