Yes, Gutenprint 5.3.3 will install and work on Monterey running on the M1 chip.  The M1 chip necessitates the presence of Rosetta.  If you have not already installed Rosetta, open the Terminal.app (/Applications/Utilities/Terminal.app).  In a Terminal window, copy and paste the following command and hit Enter.  You will be prompted for you administrator's password for your user account.  Be aware that nothing will appear on the screen as you enter you password.  Hit Enter after you enter your password.

sudo softwareupdate --install-rosetta --agree-to-license
