AFAIK the reason why some features are missing doesn't have to be only because AirPrint/IPP Everywhere design. There can be an issue in printer's IPP implementation or in CUPS itself. IMO driverless protocols tend to supply basic functionality, so you don't have to worry whether your device will be supported on a different OS. And if user is satisfied with features provided by AirPrint/IPP Everywhere (which is subjective), I wouldn't push him to a printer driver/printer application.
