What printer do you have?  There are several things I can think of for your problem.  

The limitation to make only the basic choices is usually associated with AirPrint drivers.  When you added the printer from the System Preferences, were you able to actually specify the Gutenprint drivers?  Are you using the printer with the same name as you added from the System Preferences.  When you highlight your printer in Printers & Scanners, The "Kind:" should indicated that you are using CUPS+Gutenprint v 5.3.4

Do you have Rosetta 2 installed?  Currently Rosetta 2 is required to use the Gutenprint drivers.  When we do have a package that supports the M1 chip natively, there shouldn't be any difference in how it appears.  It will use the same code base as is now used for the Intel based Macs.  Presumably the M1 and Intel drivers will be compiled at the same time.  Each binary will have both the Intel and the M1 component.
