I am not familiar with the Mac interface for CUPS, but you could try the
web interface, at http://localhost:631, that should have all the available
options.
The iP4300 is certainly supported in colour also, although the colours may
not be calibrated very well. Please let me know if you can provide more
details.

Gutenprint does not offer any functionality for supply levels, cleaning,
maintenance, etc., which is often a part of the printer driver in the
manufacturer's driver. There may be some 3rd-party utilities available but
I cannot speak for them.

I guess you are speaking here about printing wit the Canon driver of that
printer. I cannot say anything about that, unfortunately.
