So, on max when I check out the correct version (thanks Adrian), and use the
nojai profile (thanks Andrea) and either omit the epsg-access or use the
patched jar in the repository I created on windows, it does indeed build.

yeah, try http://svn.geotools.org/geotools/trunk/gt/

which should avoid a bunch of experimental directories.
