can you please tell me the best way to calculate the center point  between two other given points with latitude and longitude?

x=(x2-x1)/2 y = (y2 - y1)/2

Or did you mean something else?

I just want to do some calculations on geographic coordinates with geotools.
But I can't find it in the complex reference.

Something like 

Pseudocode

Point point1 = new Point(40.154,5.787);
Point point2 = new Point(38.489,10.478);

Point center = SomehelperClass.calculateCenter(point1,point2);

Ian's simple suggestion is all you need, but for other operations with
geographic coordinates (e.g. distance, azimuth) have a look at the
very handy GeodeticCalculator class...
