No they didn't start "doing this as theatres started getting larger
and larger screens", I don't know where you got that from.

They started double shuttering at the same time they made the move from
the silent periods ca 16 fps (which was shown triple shuttered) to today's
24 fps (which is typically double shuttered). 16 * 3 = 24 * 2 incidentally.
