[Open Mind Speech] Need Speech to Text Transribing Software

I need an Automatic Speech Recognition program to transcribe sermons of 
a pastor who has died -- one that will allow his sermon speeches to 
train the speech recognition engine.  Or, that will let me put in each 
of his words one by one until I totally build the speech recognition 
engine with his voice.

Do you know of some software that will do that for me well?  It would be 
kind of like Speech to Text or Wave to Text type software -- but better 
-- software that actually works well.
