In the former, old menu from 2.0.0 you could set turbulence.
It is not really a bug, but was nice to have. I change the label to feature request.

Turbulence may now be assigned in the global weather dialog using labels as "none", "light", "moderate" and "severe". They get interpolated over altitude and assigned to the /environment/turbulence/* properties. It's up to the FDM to handle the properties accordingly.
