Might be of interest to the person, that builds the mac binaries:

 From personal messages of David's, eXist-db on mac does not use the 
-Dfile.encoding=UTF-8 nor the -Dsun.jnu.encoding=UTF-8 java flags, and 
it also has no locale set in the environment (it runs in the C locale 
then?), when click starting from Finder.

Not a mac expert here, perhaps those should be specified in some 
.properties file? Perhaps then, also non-technical users can have 
awkward chars on the mac?
