If your device does not have a dedicated menu button, you should see a vertical three-dot icon at the bottom-right corner of the screen: that's the menu button, tap it and the Options screen should appear.
(This emulated menu button is, as far as I know, provided automatically by the Android system on such device when it is running application written for Android < 3.0; which is totally the case as Etheric Synthesizer 0.1.0 is written for Android 2.3. Maybe I should add a note about this in documentation, in case people are not familiar with using old programs on modern device)
If you looked everywhere and still cannot find the emulated button, may I know your device's brand, model, and Android version, please? So that I could find some way to accomodate them in the future.

I'm not sure if this is applicable to custom ROM like Cyanogen/LineageOS, but according to this XDA thread: holding the Home button on Galaxy S5 would bring up some kind of menubar that you could see the emulated Menu button (which is probably labeled as "More").
Unintuitive as it is, I'm curious whether this solves the problem on your device or not. So, please try and tell.
(If that is still not working, try long-pressing Back button instead. If it's still not working, you could try enabling Settings > Accessibility > Dexterity and Interaction > Assistant Menu, and add the three-dot button to it)
P.S. Since it is now apparent that this menu button business requires cumbersome procedure at least on some modern mainstream model; I'll add on-screen "action bar" with menu button which shows by default on Android 3.0+ (but can be disabled via options screen). I can't promise which version of Etheric Synthesizer this will be ready though.

Sgs5, lineage OS (based on nougat). There is no options button. Physical menu-key works as a "goto desktop key", not menu.
