I just wanted to check if I can swap the RTC from the specified DS1307 to the DS3231...? I have the latter one in my box of parts. From what I've read, it seems reasonable, but I'm not an expert in this world.

Probably not. The library code for the ds1307 is very specific.
No harm in trying it though. It would be easy enough to bread-board an ESP32 chip with the DS3221 and run the test program TESTRTCDS1307

I did some comparisons and it looks like the DS3231 should work with the existing files for this project. Alarms as such will not work as this requires extra code.
