Can you explain the new settings for the electrode montage in the toolkit? Is there a way to select a specific montage when reading in the files rather than those from the dropdown menu (e.g., GSN or Hydrocel)? Otherwise I have to remap the electrodes using the Edit dataset which takes a long time. Any help would be appreciated!

I'm sorry, I don't understand the question. What would be the reason for needing to reamp via the Edit function instead of just selecting the montage in the dropdown menu? You've explained why you don't want to do the former but not why the latter doesn't work for you.
