There is absolutely nothing I can find or think of to do under this solar system's sun to persuade this program to use my new key to sign and send email, after the old one expired and I updated it. Instead, enigmail stubbornly and doggedly reports that the key is expired.
Anyone having similar issues or know how to overcome this?

Please open the account manager Windows & macOS: menu Tools / Linux: menu Edit -> Account Manager, switch to OpenPGP Secruity. Make sure that Use specific OpenPGP key ID is active, then use the Select Key button to select your new key.

I also tried to start fresh by uninstalling and reinstalling GPG Suite (specifically MacGPG2), and removing and readding the Enigmail Add-On for Thunderbird, them running Enigmail's Setup Wizard.
However, this produces a result which does no show up in your setup guide, namely the window below, which is asking my to do something with Autocrypt (which your setup guide says nothing about), so unfortunately, I'm just re-stuck.
Yes, that's the new wizard. That's because I could not persuade anybody to go over the user manual and update it. And as this is an Open Source project run by volunteers, it's the way it is ...
Concerning Autocrypt, you don't need to use this. But you'll have to find your keys. I'm almost certain that you upgraded GnuPG (or gpgtools).
Try the following steps:
Open a Terminal, then type the following commands:
cd $HOME/.gnupg
rm -f gpg-v21-migrated
gpg2 --list-secret-keys
Then restart Thunderbird and check your keys using the Enigmail key Manager (menu Enigmail -> Key Management)
