The icons in the lower right corner tell you if a message is to be signed or
encrypted. It's sufficient to click on those icons to enable or disable signing
and/or encryption;

In my case, another icon for "ignore per-recipient rules" would make things
very easy, klicking "ignore per-recipient rules" and then directly unchecking
signing/encrypting afterwards.

now, i have to open the menu, and then using short-cuts or icons for the rest.
this is often the case, if special (per-recipient-)users appear as CCs in an
email.

I think, an additional checkbox in the "OpenPGP Encryption & Signing Settings"
Dialog would also be very helpful.
