Hi Charles. I use Camtasia Studio on Windows. It costs $300 and I would recommend paying the extra $75 for a 1-year support contract. I also got their product SnagIt ($19 extra), which is good for taking and editing screenshots (but you don't need this to use Camtasia). The documentation is very good. They have good on-line tutorials and an active user-to-user forum. Generally, I have been very happy with it. There are a few annoying bugs, but that seems inevitable.
There are two other programs that I have used a very little. Camstudio is a free program on Windows. DemoRecorder is a $47 program for Linux. I have used these for basic screen caption, but they are not as feature-rich, easy to use, and well supported as Camtasia.
Adobe also makes a similar product, but I haven't used it.
