I just tried to download enjin from the Versant website, but I am presented with only two options - Enjin for Websphere, or Weblogic. Do I really need either of these app servers installed to use JDO?

non, if you use Judo that is just techical preview of Versant JDO, you need only the database server, which is embeded either enjin or VDS. You can ignore the integration with app servers.
Since two weeks, there is a new beta version of JOD integrated in KODO. If you want join the beta test, please send me an email to yang@versant.fr.
