What is the java.exe.manifest you have been using?
Did you drop in in the <easyeclipse install dir>/jre/bin ?
Note that the reason why we do not ship that as a default, is that in the current version of SWT (in eclipse 3.1) this gives weird looking results on Eclipse forms used in some plugins.
That has been fixed in 3.2 to be released in June.
