In the MenuMaker, we should be able to specify an accelerator by, for example, "Ctrl+[", as that's the form in which it'll be displayed in the menu. However, because of the way org.erights.e.ui.jed.EAction#accelerate(String) currently works, you have to say "Ctrl+OPEN_BRACKET" instead.
