There should be an option to set which audio and subtitle tracks are played by default, or let the DVD player to choose which ones to play based on user preferences.

If the above mentioned proposal is too complex, I would suggest to at least select all languages by default and let the user disable the unneeded ones. Otherwise he/she might end up without any audio at all.
