I downloaded clonezilla and there is no man page. The website doesn't give me docs to anything but this 'live' version. I have no idea where I get the options/flags available to me, which commands it makes available or anything of that sorts. Also, why is it all on this website?

I suggest you try Clonezilla lite server instead of DRBL live, which was not actively updated for a long time due to the vital package unfs3 is dead.
