I have set the default colors for editing PHP files as having a editor color (i.e. background color) of black and various light colors for the PHP syntax highlighting.
However if I open up a plain text file then I cannot see anything. It's black text on black background. How do I adjust the default text color? Maybe I've missed something obvious here!

I think there is NO default text color : you have to select a specific syntaxic color behavior.
Maybe you can suggest to add a "Default text color" checkbox (in "general options") to Leonardo Garcia !

The color of the editor window background is set to the clWindow-Color. You can set this in the Windows-Preferences of the screen.
The second way is by the source and compiling.
