When you start for the first time the username is 'root' and there is no password. For more information (aimed at noobs coming from Windows and wanting to use Samba, but should help you too) see http://www.edendevelopments.co.uk/dlsetup.php. Regarding server vs. non-server, I know that non-server includes GRSecurity and maybe has some other defences which in server are turned off (or down), I'm not sure of the details. I think for your use non-server is the way to go.
