James, per default syslog-ng is active, not syslog. You'll have to edit the file /etc/syslog-ng/syslog-ng.conf and simply uncomment the 2 lines for /var/log/messages. This will log all messages, not just mail. You could also simply check on console 10 for postfix messages ( alt F10 ). You can use the mailq command to see if the mail is still hanging in the queue.
