how do I disable the menu activation keys ? eg: I want to map alt-f to what is currently ctrl-left.

This is handled by gtk and windows, it is the standard behavior, but you can try to remove the '&' in strings in 'string-en.zc'.
I was hoping for something more flexible and dynamic. :)
I have plans for customizations of shortcuts in preferences but the system shortcuts (such as menu activation keys) won't be redefinable.
