Well, that's the problem - I did not see anything - the output looks like everything's fine - just like if I try to change hostname on Win7 (where this function works exactly as expected).
I tryining this on Windows 10 Edu 64bit.

OK, please try Clonezilla live 2.5.5-12 again: http://clonezilla.org/downloads.php
This version should be better. I have tested many times here and it worked everytime for my Win10 virtual machine, Win7, and WinXP.

BTW, forgot to mention, you have to make sure your MS Windows is completely shutted down. The default mode for MS Windows 10 to shutdown is actually to hibernate. Therefore before you take an image, please run:
shutdown /s /t 0
to force MS Windows 10 to shutdown.
This will allow Clonezilla to be able to mount the file system and change the registry for host name.

Sorry I didn't response for a long time - holiday at work. I know about the Win10 proper shutdown issue. I tested newest testing version (2.5.5-19) and it works OK now. Thank you very much for your work - really appreciate it.
