If you create an image by choosing disk -> image, Clonezilla should not delete any files on the mounted dir, i.e. any files on /home/partimag will not be deleted. For what you mentioned, I think maybe it's because you abort the process, and unplug the USB flash drive without unmounting it or shutting down the system normally.
