I note that during the imaging process, the client attempts to mount /etc and /var from an NFS server at 10.0.0.100. Currently, there is no NFS server at 10.0.0.100. This of course results in failing to capture the image. I was under the impression that the drbl config scripts would configure NFS on the same server that I installed drbl/clonezilla on. Is this not the case? Do I need to setup NFS services on my server as well? If so, then I need to update the ip address that drbl/clonezilla is using to find the NFS share. Where can I update this? Thanks!

In your case, I suggest you try this mode:
http://clonezilla.org/clonezilla-SE/use_clonezilla_live_in_drbl.php
Then you do not have to deal with every client's /etc/ and /var/. They are from live system so they are in memory. It's easier.
