I am currently running Linux Mint 17.1 on a 10 gig HD. I want to clone this working system and put it on a 500 gig HD on another completely different set of hardware. What do I need to do to get it to boot after the process is complete?

Normally if your Linux Mint supports the hardware of your machine, what you have to do is just to clone it. Nothing special.
