I have a RAID array that has my data partitions encrypted via LUKS. I'm able go to go the command line and cryptsetup luksOopen successfully. When I lvdisplay, all my LVM partitions show up. However, when I go back to Clonezilla to attempt to image those partitions, they don't show up. What do I need to do to get Clonezilla to recognize the LVM partitions?

RAID device is complicated to Clonezilla live, besides LUKS is not supported by Clonezilla, either. Therefore your configuration is too difficult for Clonezilla to deal with. Of course you can manually run partclone command to image a LV device.
