While using I believe to be alternative stable version of clonezilla live, we have a good number of apple laptops to image and over 50% show a blank screen in place of the partimag screen. Is there anything I can do about that (I can try stable or testing clonezilla of needed)?

Normally this is Linux kernel hardware support issue. Did you try the alternative testing Clonezilla live on http://clonezilla.org/downloads.php ?
They come with newer Linux kernel so it might help.
