There are two entries (CHEBI:30919 and CHEBI:16831)
containing compounds referred to as 3-hydroxy-3-
methylglutaric acid. CHEBI:30919 properly indicates
that there is no stereochemistry present; however,
CHEBI:16831 suggests an absolute configuration of (S)
at the 3-position, which would seem to be incorrect, as
no stereochemistry is possible at that position. This
may stem from the corresponding entries in KEGG
(C03761 and C04032) which also designate an (S)-form
and a nonstereospecific form.

You are of course right here: no stereochemistry is
possible and consequently I have edited and merged these
two entries in ChEBI.
