Yes. I have several computers with multiple bttv cards. I can have three TV shows (or security cameras, etc) on one monitor using the built-in audio on the motherboard and two extra sound cards.
Side note... if you have 5 PCI slots you can put 5 cards in one machine. If you need sound capture for those 5 cards, use USB sound devices (hard to find, but I found some on Ebay). And you'll need ALSA since OSS only allows 2 sound devices at a time.
