In BibDesk 1.8.5 (5718), when editing an entry, if any text input box other than "Cite Key" has focus, changing the entry type (i.e., Article -> InProceedings) will not update the fields.
This is probably the same problem as bug # 1614, which should already be fixed in the nightlies. Perhaps you can test a recemt nightly build for this.
