Reading the wiki it's written that icons in Fallback mode are skinnable. But - after specifying which apps are in fallback - how to write in the config the icon i want?

The point about the fallback icons is that you cannot use the skinning system (so far - i've actually wasted some time on the systray and will try to waste more time on it this WE)
Non fallback icons can be "skinned" by placing an icon with the correct name (as eg shown in the systray config dialog) into the theme dir (usually the application name, like kmail.png)

I'd say it actually says the exact difference.
