I don't know about conversion tools, but I've created some libraries to smooth over some of the differences between classic and Carbon. The best help is experience, i.e. knowing what to expect and how to deal with it by having done it before. I recently ported Glypha III to run on macOS <https://github.com/jjuran/glypha3-fork/>. The commit history contains a sampling of the sorts of issues that come up in porting Mac applications forward, everything from updating old routine names to implementing Apple events to dealing with Carbon, Aqua, umbrella frameworks, gcc, little-endian, clang, retired headers, and even bugs in newer OSes.
