Using barcode4j-fop-ext-0.20.5.jar, I am able to use
#page-number# to barcode the page number. Similarly,
is there a way to barcode "total-pages" of pdf?

I'm sorry about the delay. I've only now found your bug
entry. The notifications were disabled so I didn't get notified.
To your question: At the moment, the total number of pages
cannot be inserted into the barcode message. This will be a
bit more difficult than the current page because the number
of pages is only known after the last page is rendered. I'll
investigate and will convert this issue into a RFE. No
guarantees though, when (and if at all) this will be
implemented.
As a work-around you could try to use a barcode font instead
of Barcode4J if you need the number of pages in your barcode.
