Nevermind, it looks like I may have answered my own question.
Checking the status of the storage resource shows a bytes total that seems
to be changing. Of course, something is very off when it's taken 4.5 hours
to do 2gb.

While a job is running, is there a way to determine how much data has
actually been backed up?
Status dir only reports that the job is running, however, I have a feeling
it's not actually doing anything. I know on windows machines, you are able
to see how much data has been sent to the storage daemon, but this is a Mac
OSx server and I don't seem to have the same capability. Regardless, I'd
like to be able to do it through the console.
